Roast Beef

Typically I make roast beef for sandwich meat so I want it to be more pink and cook it for less time. I usually get a 2 Lb roast (small) and cook it for 45 mins (which is less time than the standard.)
STEPS:
Preheat the over to 350
Brown the roast in a pan with butter
Coat it in Mustard and put it on a baking sheet
Cook it for 45 mins and check that the internal temp hits 145 F
Take it out and cover with tinfoil, let it rest for 15 mins (it will keep cooking internally)
Slice it up! DONE!
